The Ultimate Traybake Ragu (6-8)

Described as ” a plant based ragu to end all others ” I can assure you this vegan recipe will not disappoint. The ragu will keep in the fridge for up to 3 days, or in the freezer for a month. It can be served with pasta or polenta, or used as a base for lasagne or shepherds pie ( for the latter cook a bit less as it will cook more in the oven.) The recipe is from ” Ottolenghi Flavour” by Yotam Ottolenghi and Ixta Belfrage.

Miso Marinated Bavette (2)

Bavette is one of the most flavourful cuts of beef and is relatively cheap compared to other cuts. It can be very tender if marinated overnight, and should be served medium as it can get very tough if cooked to well done. Its lovely when prepared this way from ” Comfort & Spice” by Niamh Shields. Start to prepare the day before.

Salmon with Greens and Shitake Mushrooms (2)

A quick and healthy supper from ” Nigella Bites” by Nigella Lawson. If you can, use wild or organic salmon. Farmed salmon won’t taste anything like as good and is often detrimental to the environment and harmful for the fish, contributing to disease. I would far rather eat less fish than support many types of fish farming.

Lamb Shoulder with Herbs and Preserved Lemons (6-8)

A recipe from the excellent book ” Home Food” by Olia Hercules. It can be served with grains such as couscous or freekah but also with rice, boiled and crushed potatoes or flatbreads . Lamb shanks can be used as a cheaper alternative to shoulder if you like. If you like you can shred the cooked lamb and mix it with the juices up to a day before and keep in the fridge, then just reheat in a lidded pan with a splash of water mixed in, or in a foil baking tray, before serving.
