Salmon with Greens and Shitake Mushrooms (2)

A quick and healthy supper from ” Nigella Bites” by Nigella Lawson. If you can, use wild or organic salmon. Farmed salmon won’t taste anything like as good and is often detrimental to the environment and harmful for the fish, contributing to disease. I would far rather eat less fish than support many types of fish farming.

  1. Grill or fry the salmon fillets until just cooked through, then remove to warmed plates while you finish cooking the vegetables.
  2. Meanwhile in a heavy based frying pan fry the garlic in oil until it is warm but not catching. Add the sliced mushrooms together with the choy sum stalks, stirring everything together for a minute or so.
  3. Cover the pan and cook for about 5 minutes, then remove the lid and add the choy sum leaves, soy sauce and sesame oil, Cook for another 2-3 minutes until the leaves have wilted.
  4. Put the mushrooms and greens onto platesd with the salmon and serve. If you like you could serve with a little sauce made by mixing Colmans mustard powder into a smooth paste with a little cold water, then add ing a little soy sauce and grating of fresh ginger.
