I visited good friends for dinner yesterday and was served this most delicious but simple supper for summer. My friend didn’t have any Cornichons so prepared the dish using capers instead, and this worked very well. The recipe is from Diana Henry’s ” From the Oven to the Table”, one of my go to cookbooks.
A Scandinavian inspired salad from ” Cook Simple” by Diana Henry. You could use smoked trout or fresh salmon instead of the hot smoked salmon, and add quarters of cooked ( not pickled) beetroot if you like.
A great supper from ” Cook Simple” by Diana Henry. The salmon caviar makes it special, but is expensive so can be omitted. If you like you can add cooked peas or little spears of asparagus when in season. You can use smoked trout instead of salmon, or a mixture of smoked and fresh cooked salmon.
A fragrant curry from Tamil Nadu which i found in ” Masala” by Mallika Basu. If you like the sauce can be made in advance and the salmon added when you are ready to eat.
