  1. Preheat the grill to high, or if you dont have a grill preheat the oven to 220 c Gas 7.
  2. Bring a large pot of salted water to the boil. Meanwhile trim a good bit of the stem off of the broccoli and compost. Plunge the broccoli head into the boiling water and cook for 3-5 minutes or until just tender but still bright green. drain and tip into a bowl of ice cold water.
  3. Return the pan to the heat and add the butter. As soon as its melted swirl in the flour and whisk to a smooth paste. Next, gradually add the cider until you have a sauce consistency. Add the cheese and stir until melted. Fold in the mustard, chilli powder and some black pepper. Check seasoning.
  4. Put the broccoli head into a baking dish. Spoon over the cheese sauce and scatter with the walnuts. Cook on a high shelf in the oven for 10-15 minutes until the sauce is golden and bubbly.
