An unforgettable Greek way with potatoes from Nigel Slater’s ” Real Good Food”.
Preheat the oven to 200 C, Gas 8.
Put the potatoes in an ovenproof dish. Squash the garlic clove and add it whole.
Pour over the olive oil and lemon juice then add the bay leaves, a little salt and plenty of black pepper.
Bake for about an hour until soft and slightly crisp on top, stirring once or twice during cooking.
