This recipe is from ” Real Food” by Nigel Slater 1998
Warm the olive oil in a shallow frying pan until it starts to sizzle.
Season the scallops with the salt and pepper then drop into the pan. Leave to cook for one minute until there is a golden crust on their underside. Turn over and cook the other side. This will take 2-3 minutes in all.
Remove the scallops from the pan and put onto hot plates. Add the butter to the pan and when it starts to froth add the garlic, swirl around , then add the parsley.
Pour the butter over the scallops and serve immedietely with the lemon halves.
