A simple salad with a punchy dressing from Diana Henry.
Ingredients
- 600 g tomatoes ( use mixed colours if available) sliced or halved, depending on their size
- ½ small red onion sliced wafer thin
- 2 tbsp roughly chopped parsley
- For the dressing:
- 1 tbsp white balsamic vinegar
- 3½ tbsp extra virgin olive oil
- ½ tsp celery seeds
- ½-¾ tsp Tabasco you may want a little more
- 1½ tbsp grated horseradish
- 3 tsp amontillado sherry or add to taste
- ¼ tsp sherry vinegar

Instructions
- Make the dressing by combining everything for it in a bowl and whisking with a fork. Taste. This dressing needs to be assertive. You might want it a little hotter and you might want a tiny splash more sherry vinegar.
- Tumble the tomatoes into a serving bowl along with the onion and parsley, and add salt and pepper. Toss with the dressing and serve.
