A recipe from Nigel Slater.
Preheat oven to 200 C, 180 Fan, Gas 6.
Place the mushrooms in a roasting tin and scatter over the garlic, olive oil, madeira, soy and knobs of butter.
Bake in the oven for 20 minutes or until soft and tender, basting once during cooking with the pan juices.
When reeady taste the liquid in the pan and add a squeeze or two of lemon if it needs to be any sharper. Check the seasoning and serve.
