  1. Put the potatoes, garlic and duck fat into a deep sided shallow pan.Cover with a lid and cook over a medium heat for about 25 minutes until tender.
  2. Pour off most of the fat, increase the heat and season with salt. Continue cooking, uncovered, to crisp the potatoes lightly here and there and serve immediately.
