An easy recipe for new potato salad.
Wash, scrape or scrub the potatoes and place in a pan of cold salted water with the mint. Bring to the boil and boil for 10-15 minutes until tender when pierced.
Drain the potatoes and slice while still hot.
Tip the potatoes into a serving bowl and add the mayonnaise and spring onions, stirring gently to combine. Season to taste and set aside to cool before serving .
