Delicious noodles from Georgina Hayden.
Ingredients
- 400 g Tenderstem or Purple Sprouting broccoli
- 4 blocks wholewheat noodles
- 1 garlic clove crushed
- 25 g fresh root ginger finely grated
- 3 tbsp soy sauce
- 1 1/2 tbsp rice-wine vinegar
- 2 tbsp toasted sesame oil
- 1 tbsp clear honey
- 3 tbsp tahini
- 1 tsp sambal oelek paste
- 25 g mixed soft herbs such as mint, basil and coriander
- 2 tbsp sesame seeds toasted, to serve

- Trim the Tenderstem and halve any thicker stems lengthways. Add to a large pan of boiling salted water along with the noodles; cook for 4 minutes, then drain and rinse under cold running water to stop them cooking further.
- In a large bowl, stir together the garlic, ginger, soy sauce, rice wine vinegar, sesame oil, honey, tahini and sambal oelek paste (add extra sambal oelek if you like it very spicy). Roughly chop the herb leaves and add to the bowl along with the drained no
