Another recipe from my new book ” Apple” by James Rich. Serve as a base for cocktails, on the rocks or with some elderflower cordial and sparkling water. You dont need to peel the apples and could replace some of them with blackberries or cinnamon for an alternative taste.
Sterilize a large kilner jar and add the chopped apples. Pour the vodka over the apples ensuring they are fully covered.
Seal the jar and leave to infuse in a cool dry place for 3-4 weeks. You can taste after a couple of weeks and continue infusing or not according to your taste. It will start to yellow and darken the longer it is infused.
When the vodka has reached your preferred flavour strain out the apple pieces and pass the liquid through a muslin to remove sediment.
Pour into individual bottles then label and seal until ready to drink.
