Potato, onion and pepper tortilla (2)

4 tbsps olive oil 1 clove garlic, sliced
2 potatoes, diced in ½ “ cubes 1 small green chilli, deseeded & chopped
1 romano red pepper, sliced 6 large organic eggs, beaten
1 onion, sliced

 

  1. Heat the olive oil in a large sauté pan. Add the potato and season.
  2. Saute for about 10 minutes, stirring from time to time, until partly cooked.
  3. Add the romano pepper and onion. Season and continue to cook for another 10 minutes.
  4. Check the vegetables are cooked then add the garlic and chilli.
  5. Pour over the eggs and cook gently on the hob for a few minutes until set underneath. Finish off under the grill.
  6. Serve with green salad.
