An easy snack or dinner from ” Cook As You Are” by Ruby Tandoh.
First prepare the peas. Soak in a bowl or jug with %00 ml of freshly boiled water for 5 minutes.
While the peas soak prepare the paneer. Heat the oil in a small frying pan over a medium heat. Add the grated paneer and fry, stirring often, for 3-4 minutes. Transfer to kitchen paper to drain.
Drain the peas and mash very well with a fork or pulse briefly in a food processor or blender- you want it coarsely textured. Stir in the lemon or lime juice, oil, chilli flakes and torn mint and coriander. Season with salt to taste.
Toast the bread, then drizzle with some olive oil and rub a cut side of garlic over the bread. Top the bread with the peas and then finish with the crispy paneer.
