A Syrian dish of eggs with beef and courgettes which i found in ” Sumac” by Anas Alassi. Serve it with flatbreads .

  1. Heat the oil in a large pan. Add the onion and the courgette and stir fry until golden brown.
  2. Add the minced beef and break it up into small pieces with a wooden spoon. Brown for 5 minutes until it is completely cooked. Season with salt and pepper to taste.
  3. Turn the heat to low and make four little wells in the beef mixture. Crack an egg into each well. Cover and cook the eggs for 3-5 minutes, or until the yolks are thoroughly cooked.
  4. Sprinkle generously with parsley and serve with flatbreads.
