A Syrian dish of eggs with beef and courgettes which i found in ” Sumac” by Anas Alassi. Serve it with flatbreads .
Ingredients
- 2 tbsps olive oil
- 1 onion peeled and chopped
- 1 courgette roughly chopped
- 250 g minced beef
- salt and pepper
- 4 free range eggs
- 1 bunch flat leafed parsley coarsely chopped

- Heat the oil in a large pan. Add the onion and the courgette and stir fry until golden brown.
- Add the minced beef and break it up into small pieces with a wooden spoon. Brown for 5 minutes until it is completely cooked. Season with salt and pepper to taste.
- Turn the heat to low and make four little wells in the beef mixture. Crack an egg into each well. Cover and cook the eggs for 3-5 minutes, or until the yolks are thoroughly cooked.
- Sprinkle generously with parsley and serve with flatbreads.
