  1. . Wash and remove stems of the apricots and pull apart at the natural line. Place snugly in an ovenproof dish skin side down,Preheat the oven to 180 C.
  2. Bring all the remaining ingredients ( except the lavender for decoration) to a rolling boil in a small pan for a few minutes. Pour over the apricots and cover the dish with foil.
  3. Bake for 20-30 minutes then remove the foil and continue to bake for 5-10 minutes more. The apricots should be soft. Remove the lavender and cinnamon sticks. Arrange the fresh lavender to decorate.
  4. Serve with ice cream.
