Another good summer dessert from ” Cook Simple” by Diana Henry. Use Blueberries if you cant get Blackberries.
Ingredients
- 12 ripe apricots halved and stoned
- 75 g caster sugar
- 125 g mascarpone
- 75 g blackberries

Instructions
- Put the apricot halves, skin side down, in a dish that can take the heat of the grill e.g. Le Creuset gratin dish. Sprinkle on a third of the sugar.
- Spoon the mascarpone into the hollows of the apricots and scatter the berries on an around the apricots. Sprinkle on another third of the sugar.
- Put the dish under a very hot grill and grill for three minutes then sprinkle on the remaining sugar. Grill for another three minutes until the top is glazed and bubbling. Serve immediately.
