Another good summer dessert from ” Cook Simple” by Diana Henry. Use Blueberries if you cant get Blackberries.

  1. Put the apricot halves, skin side down, in a dish that can take the heat of the grill e.g. Le Creuset gratin dish. Sprinkle on a third of the sugar.
  2. Spoon the mascarpone into the hollows of the apricots and scatter the berries on an around the apricots. Sprinkle on another third of the sugar.
  3. Put the dish under a very hot grill and grill for three minutes then sprinkle on the remaining sugar. Grill for another three minutes until the top is glazed and bubbling. Serve immediately.
