This very good salsa is from ” Alice’s Cook Book” by Alice Hart
Ingredients
- 4 large corn cobs
- 2 green chillies deseeded and finely chopped
- 400 g tin black beans rinsed and drained
- juice of 1/2 lime
- 1 tsp brown sugar
- a small handful coriander leaves chopped

Instructions
- Use a small sharp knife to cut the corn kernels from the cobs, running as close to the cores as you can. Heat a large frying pan over a medium high flame and add the corn and the chillies.
- Dry fry for about 10 minutes, stirring often, until the kernels are browned. Set aside to cool. Once cooled, add to the beans in a serving bowl together with the lime juice, sugar, coriander leaves and a sprinkle of salt. Stir well and serve.
