Chicken Rice Soup (6)
Ingredients

long grain rice

diced boned free range chicken
bite sized pieces

plump garlic cloves
peeled and crushed

onion
quartered
1
inch
fresh ginger
peeled and finely sliced

tsp
coarsely ground black pepper

tsp
sea salt

cups
good chicken stock
6
pints
water
1
cup
sliced spring onions
Instructions
Put all the ingredients except the spring onion in a large saucepan. Bring to a boil then reduce heat to medium low. Cover and simmer for 90 minutes , stirring from time to time.
Serve sprinkled with the spring onion.
