Another Scandinavia style mulled wine for the festive season from Diana Henry. Skal!
Ingredients
- 4 green cardamom pods cracked
- 2 cm piece root ginger peeled and finely sliced
- ½ cinnamon stick
- 5 allspice berries
- 6 white peppercorns
- 3 broad strips of orange zest be sure to leave the bitter white pith behind
- 200 ml white rum
- 2 bottles white wine dry riesling is good
- 400 ml apple juice preferably one that isn’t cloudy
- 130 g granulated sugar or add it to your taste
- 60 g blanched almonds
- 80 g raisins
- 35 g dried apricots chopped

- Put the cardamom, ginger, cinnamon, allspice berries, white peppercorns and orange zest in a jar and pour on the rum. Cover and leave for 24 hours.
- Put all this into a large saucepan. Add the other ingredients and heat gently, stirring to help the sugar dissolve. Don’t let the mixture boil. Serve warm, being sure to add some dried fruit and almonds to each glass.
