Instructions
  1. Cut the beef abainst the grain into thinly sliced pieces 2-3" long by 1" wide.
  2. Blend together the red pepper, onions, garlic, shrimp paste and chilli powder in a blender, until smooth. Add a little water to loosen if absolutely necessary.
  3. Heat the oil in a frying pan over medium heat. When hot, add the contents of the blender then stir and fry for 7-8 minutes until the paste has darkened and seperated from the oil.
  4. Add the meat and the fish sauce. Stir and cook for a couple of minutes then stir in the coconut milk.
  5. Season and add the dried lime leaves. Coarsely tear the basil and mint leaves and add. Stir all together, then turn off the heat and serve with rice,
