  1. Lay the cucumber on a chopping board and smack it hard a few times with a rolling pin then cut it lenthways into four pieces.
  2. Holding your knife at an angle to the chopping board cut the cucumber on the diagonal into 1 cm slices.
  3. Place in a bowl with the salt and mix well. Set aside for 10 minutes.
  4. Meanwhile combine all the other ingredients in a small bowl.
  5. Drain the cucumber then pour over the sauce, stir well and serve immediately.
