A play on Eton Mess from ” Cook Simple” by Diana Henry.
Ingredients
- 400 g strawberries
- 7 passion fruit
- 350 ml whipping cream
- 200 g greek yoghurt
- juice of a lime
- 7 tbsps icing sugar
- 125 g meringues

Instructions
- Hull the strawberries and quarter or halve the largest ones. Halve the passion fruit and extract all the juice and seeds.
- Whip the cream, then add the yoghurt, lime juice and sugar.
- Set aside some smaller pieces of fruit for decoration. Stir the rest of the fruit into the cream.
- Roughly smash up the meringues and gently fold them into the cream. Pile into glasses and garnish each one with a small strawberry and a drizzle of passion fruit. Serve immediately.
