Spaghetti with Prawns and Rocket (4)

  1. Cook the spaghetti in a large pan of boiling salted water according to packet instructions.
  2. Meanwhile heat three good glugs of extra virgin olive oil in a large frying pan and add the garlic and chilli. As the garlic begins to colour add the prawns and saute for a minute.
  3. Add the white wine and the tomato puree and simmer for a couple of minutes.
  4. When the pasta is ready drain in a colander, reserving a little of the cooking water. Toss the spaghetti with the sauce, squeeze in the lemon juice and add half the chopped rocket . Add a little of the reserved cooking water if you want to loosen the sauce a bit. Check seasoning.
  5. Divide between 4 plates and sprinkle with the grated lemon zest and the remaining rocket leaves.
