Mango and Passion Fruit Fool (4)
Instructions
  1. Peel the mangoes and cut into large chunks. Liquidise with the lime juice in a blender, adding more if needed.
  2. Whip the cream until it starts to thicken but stop well before it stands in peaks.
  3. Slice two of the passion fruit in half and rub them through a strainer to extract the juice.
  4. Gently but thoroughly stir the cream, mango puree and passion fruit juice into the yoghurt.
  5. Spoon into small wineglasses and chill for up to an hour.
  6. Just before serving cut the remaining passion fruit in half and squeeze the seeds and pulp on top of each fool.
