Kerala Fish in Coconut Milk (4-6)

  1. Rub the fish pieces with some salt and set aside.
  2. Heat the oil in a wok and fry the onion, garlic, ginger and green chillies until the onion is golden brown.
  3. Reduce the heat and add the turmeric and potatoes and season to taste. Mix well then add the thin coconut milk and simmer for about ten minutes until the potatoes are nearly cooked.
  4. Drain the fish and add to the pan. Carefully cover the fish with the gravy and simmer gently for about ten minutes, stirring gently from time to time, until nearly cooked.
  5. Add the thick coconut milk and vinegar and bring to a quick boil without covering the pan.
  6. Garnish with coriander and serve immediately with some boiled rice or Indian bread.
