  1. Cut the chicken into 1 cm strips and put into a china or glass bowl.
  2. In a blender wghizz together the fresh and dried chillies, garlic, saffron, most of the mint, olive oil and most of the lemon juice. You should end up with a thick paste.
  3. Pour the paste over the chicken and mix gently, Set aside for about 30 mins.
  4. Heat a griddle pan and lightly oil it. When very hot add the strips of chicken and any marinade clinging to them. Griddle for 3-4 mins on each side until golden brown in patches.
  5. Season with a little salt and the remaining lemon juice and mint. Serve with lemon wedges, couscous and a green salad.
