  1. Pull the heads off the prawns and discard. Peel the prawns reserving the shells. Place the shells in a pestle and mortar and pond thoroughly to extract juice.
  2. Strain the liquid and mix it with the olive oil, parsley, garlic and lemon juice.Mix half of this dressing with the mussels and set aside.
  3. Cut the peppers in half and deseed. Grill for about 3 mins on each side and then rub off the skin. Lay the peppers on a serving plate and drizzle over a little of the prawn flavoured dressing.
  4. Arrange a layer of the hard boiled eggs on top of the peppers, then the mussels on top. Cover with the prawns and and drizzle over the remaining dressing. Chill until ready to serve.
