Crab Mac ‘N’ Cheese (2)

  1. Preheat the grill to medium high. Boil the pasta for 6 minutes until just tender.
  2. Meanwhile, put the butter, flour and milk in a pan and bring to the boil, whisking continuously. Once thick and smooth remove from the heat and stir in the mustard and 60g of the cheese. Season.
  3. Reserve 2 tbsps of the pasta water, then put the spinach in a colander and pour over the remaining contents of the pasta pan Allow to sit for a few minutes to drain.
  4. Tip the macaroni and spinach into a baking dish, then pour in the cheese sauce and stir. Then mix half the crab into the pasta. Scatter over the remaining crab.
  5. In a bowl mix the breadcrumbs, cayenne and remaining cheese and sprinkle on top of the pasta. Grill for 5 minutes until the topping is golden and the sauce is bubbling at the edges. Serve with a green salad.
