  1. Get a large wok really hot then heat enough oil to make a puddle in the bottom. When it gets really hot throw in the garlic and let it just brown, stirring.
  2. Add the chilli and the lime leaves and fry for a few seconds, then add the prawns. Stir fry for 4 minutes. If the prawns are already cooked then 2 minutes will suffice.
  3. Splash over the fish sauce and season with salt and pepper. Squeeze over the lime juice and eat immediately.
