Delicious plums from ” Organic” by Sophie Grigson and William Black. Serve cold with cream, and some extra sugar or honey on the table for those who like their fruit a little sweeter.

  1. Preheat the oven to 150 C, 140 Fan, Gas 2. Arrange the plums in a snug single layer in a roasting tin.
  2. Put the cider, cinnamon stick and sugar in a saucepan and stir over a moderate heat until the sugar has dissolved.
  3. Bring up to the boil and simmer for 10 minutes to make a light syrup. Pour over the plums and place in the oven while still hot.
  4. Bake for 20-35 minutes depending on the ripeness of the plums, basting once or twice as they cook, until very tender.
  5. Lift the plums out with a slotted spoon and pile into a shallow serving dish. Put the roasting tin on the hob and boil the juices hard until reduced by about half.
  6. Pour over the plums and leave to cool. Serve cold with cream.
