  1. Whisk together the shallot, sherry vinegar, 3 tbsps of the extra virgin olive oil, sea salt and pepper. Set aside.
  2. Bring a large pan of salted water to the boil and add a third of the spinach. As soon as it wilts remove from the water with a slotted spoon and cool under cold running water. Cook all the spinach this way, then squeeze out as much excess water as you can.
  3. When ready to serve heat the remaining 2 tbsps of the oil in a saucepan and lightly fry the garlic. Add the spinach and stir fry until hot.
  4. Rewhisk the dressing and mix into the spinach. Check seasoning and serve immediately. If desired you can add finely shredded fresh mint.
