If you want to make this soup in advance then reheat without boiling.

  1. Heat the butter in a large pan and cook the onion gently without browning.
  2. Add the pears and stock and season lightly. Simmer until the pears are very tender. Cool slightly then liquidise and sieve.
  3. Return the soup to the pan and reheat without boiling. Add the cheese and stir until dissolved.
  4. Sharpen with lemon juice to taste and check the seasoning. Sprinkle over the chives and serve immediately.
