  1. First make the sauce. Combine the peanut butter, hoisin sauce, chilli oil with bits and lime juice in a small bowl. Slowly mix in the water then set aside.
  2. Heat 1 tbsp oil in a large frying pan or wok over a medium heat. Add the pak choi, carrot and leek and stir fry for a minute. Add the garlic and stir fry for a further 1-2 minutes.
  3. Add the noodles and the sauce and combine well. Stir fry for another 1-2 minutes until the noodles are coated in the sauce and warmed through. Taste and season with salt if needed. You may need to add a splash more water or more chilli oil to loosen.
  4. Serve immediately, sprinkled with the peanuts and spring onion.
