A quick and easy stir fry from ” Dominique’s Kitchen” by Dominique Woolf.
Ingredients
- 4 tbsp unsweetened crunchy peanut butter
- 3 tbsp hoisin sauce
- 3 tbsp crispy chilli oil, with bits
- 1 tbsp lime juice about half to one lime
- 125 ml water
- For the noodles
- 1 tbsp Neutral oil for frying
- 1 pak choi or similar veg sliced lengthways
- 1 carrot cut into thin batons
- 1/2 leek trimmed and sliced
- 2 garlic cloves crushed
- 2 portions ready-to-wok udon noodles
- To serve:
- 30 g salty peanuts roughly chopped
- 1 spring onion finely sliced

- First make the sauce. Combine the peanut butter, hoisin sauce, chilli oil with bits and lime juice in a small bowl. Slowly mix in the water then set aside.
- Heat 1 tbsp oil in a large frying pan or wok over a medium heat. Add the pak choi, carrot and leek and stir fry for a minute. Add the garlic and stir fry for a further 1-2 minutes.
- Add the noodles and the sauce and combine well. Stir fry for another 1-2 minutes until the noodles are coated in the sauce and warmed through. Taste and season with salt if needed. You may need to add a splash more water or more chilli oil to loosen.
- Serve immediately, sprinkled with the peanuts and spring onion.
