Luxury Cauliflower Cheese (2-4)

One of my favourite versions of cauliflower cheese from Nigel Slater. I like to serve this with oven chips, or a baked potato. But if you are less greedy than I am a green salad will suffice.

  1. Pour the milk into a saucepan and add the bay leaf. Peel the onion and spike with the cloves, then add to the milk. Bring it to the boil. As soon as the milk starts to rise in the pan, turn it off and leave to infuse for 10 minutes. Preheat the oven to 220 C Gas 7.
  2. Melt the butter in a heavy based saucepan, add the flour and cook, stirring regularly, until it is biscuit coloured and smells warm and nutty. Remove the onion from the milk and gradually pour the milk into the saucepan, stirring as it thickens. Season with salt and pepper and let it come almost to the boil. Reduce the heat and simmer for 15-20 mins.
  3. Stir in the cream and the grated cheddar. Check the seasoning.Set aside.
  4. Bring a pan of water to the boil, season lightly with salt. Add the cauliflower and boil for about 5 minutes. The cauliflower should take the point of a knife without too much pressure. Drain carefully then tip into a baking dish.
  5. Pour over the sauce, then scatter the surface with the grated parmesan. Bake for about 20 minutes, until the sauce has formed a patchy golden crust and is bubbling around the edge.
