Lamb with Anchovies and Thyme (2)

A quick supper from ” Nigellissima” by Nigella Lawson. Serve with rocket or perhaps some wilted spinach, and good bread if you like to mop up the juices.

Instructions
  1. Heat the oil in a heavy based non stick frying pan and fry the lamb for about 2 minutes a side, or until they are as cooked as you like. Remove to a board lined with foil and turn up the ends to contain any juices that run.
  2. Off the heat add the anchovy fillets to the pan and stir until they begin to break up and melt into the pan. Return to the heat and add the thyme leaves, still stirring.
  3. Add the vermouth and let it bubble up in the pan, then pour in any juices that have collected from the lamb steaks. Continue to boil for about 30 seconds until thickened.
  4. Put the steaks on two plates and pour over the sauce, then serve immediately.
