Ingredients
- 5 tbsps olive oil
- 3 plump garlic cloves peeled and crushed
- finely grated zest of 2 oranges
- 2 tbsps clear honey
- 1 tbsp dried mint
- 1 1/2 tsps ground turmeric
- 3/4 tsp salt
- 500 g lamb chops
- 200 g onion peeled and finely sliced

- In a small bowl mix together the olive oil, garlic, orange zest, honey, dried mint, turmeric and salt. Lay the lamb chops in a flat dish and pour over the marinade to cover. Cover the dish with clingfilm and leave to marinate in the fridge for at least 2 hours or overnight.
- Preheat the oven to 200 C (180 Fan) Gas Mark 6. Spread the onion slices out in a roasting tin and place the chops on top. Roast for 15-20 minutes depending how well done you like your lamb. Serve immediately.
