Another favourite from Bengal which I found in Asma Khan’s ” Ammu”. With British and Portuguese influences recipes like this would have originated as railway meals for the colonial elite, but later spread to the general public.
A Bengali dish from Asma Khan’s ” Ammu” whicj is served with rice and dal. You need to use standard white potatoes, not new potatoes or floury ones. If you cant find small prawns use larger ones and cut them into 1 cm pieces.
Both a comforting supper and a storecupboard standby from ” Nigella Bites” by Nigella Lawson. They are good served with frozen peas and tomato ketchup, or perhaps mango chutney which I can enjoy with anything.

A classic South African recipe which is good served with a Tomato and Onion Salad. Any leftover filling will be even more delicious the next day served with rice or salad. It’s from Nokx Majozi and I found it in ” Chefs at Home” . The book was written to support Hospitality Action during Lockdowns in 2020 and 2021, and contains recipes from UK based chefs.
A seasonal Middle Eastern recipe which I found in Delicious magazine. The lamb, onions and herbs can be cooked in advance and frozen, but its best to cook and add the rhubarb when you are ready to serve.
