Beef Bulgogi with Sushi Rice (4)

A Korean dish of marinated meat and my go to dish whenever i visit my local restaurant Per and Kor. Its run by a lovely couple- she is Korean and he is Persian and I have never been disappointed with the food although there can be a bit of a wait. They serve their Bulgogi with crunchy lettuce leaves to wrap the beef. This version is from ” A Flash in the Pan” by John Whaite. Start making this in the morning to give the beef plenty of time to marinate.

A Syrian version of the simple and popular middle eastern dish of eggs with spicy tomatoes known as Shakshuka. Its’s from ” Sumac” by Anas Atassi. It can be served at any time of day and is good accompanied by flatbread, baguette or oven chips.

Sticking with todays theme of things to do with leftover Turkey, here is a curry with thai influences from ” Gizzi’s Seasons Eating’s” by Gizzi Erskine.

Lentil Salad with Soft Boiled Eggs and Tapenade Toasts (4)

A very good lentil salad from ” The Really Helpful Cookbook” by Ruth Watson. The salad will benefit from being made ahead and sitting in the dressing for a day or two.The tapenade in this recipe does not include any anchovies so it is suitable for vegetarians. You could use ready made tapenade if you like or put anchoiade on the toast instead. Any leftover tapenade can be kept in the fridge for up to a week to serve with drinks .

Pinchitos Morunos (4)

These Moorish skewers are a popular tapas in Andalucia, Spain. You will need 4-8 skewers, depending on their length, and could use lamb instead of pork if preferred. The recipe is from ” Moro:the Cookbook” by Sam and Sam Clark.
