I recently spent a week in Armenia and was pleasantly surprised by the food there- especially when eating in family ” restaurants” in local villages. I came home seeking out Armenian recipes so i could try more of their food back in the UK. This is from ” Home Food” by Olia Hercules.
A favourite way with chicken from ” Mezcla” by Ixta Belfrage. The chicken can be marinated and kept in the fridge up to 2 days ahead but bring it back to room temperature before cooking.
A simple and quick version of lasagne from ” Mezcla” by Ixta Belfrage. If you like you could use chicken stock or bone broth if you are not catering for vegetarians. Spinach, chard leaves or ham also make a good addition to the layers.
These delicious oily and garlicky clams are from ” Mezcla” by Ixta Belfrage. They can be served as a starter or a main. Instead of the chickpeas they can be tossed with pasta, or served with grilled bread or chips.
A simple and delicious combination from Ixta Belfrage in ” Mezcla”. Serve at room temperature with bread to mop up the juices. You could also serve with burrata, soft boiled eggs or shaved pecorino for a light supper.
A recipe for spiced sausages from ” Indian in 7 ” by Monisha Bharadwaj. It also works well with Cumberland Sausages or sausages with onions. You can either serve it with mashed potatoes and a green vegetable pr with rotis or pitta breads.
