Heat the oven to 200 C gas 6. Peel the potatoes and finely slice crosswise. Toss in a bowl with the olive oil, sea salt and pepper.
Lightly oil a baking tray and scatter the potatoes loosely over the base. Pour over the white wine and scatter with the thyme.
Bake for 30 mins during which time the wine will bubble away, and the potatoes crisp. Keep checking during the last for minutes after the wine has evaporated as you dont want them to overcrisp. Serve straight away .
