  1. Chop the cranberries in a food processor then place in a saucepan.
  2. Pare off the coloured part of the orange rind with a potato peeler and cut it into very fine shreds. Add these to the pan together with the juice of the orange, the ginger, sugar and spices.
  3. Bring to a simmer, stir well, then cover and simmer gently for five minutes.
  4. Remove the pan from the heat and stir in the port. Allow to cool and pour into a serving bowl. Cover and keep in a cool place until needed. Remove the cloves and the cinnamon stick before serving.
