Place the noodles in a heatproof bowl. Cover with boiling water and stand for five minutes. Drain then roughly chop.
Heat the oil in a wok and add the garlic, chilli, shallots and crab meat. Stir fry until the liquid evaporates and the crab meat is lightly browned.
Add the noodles, fish sauce, lime juice and coriander. Continue to stir fry until combined and heated through. Serve immediately.
