Courgette and Goat’s Cheese Frittata (4)

My favourite frittata recipe is probably Courgette Frittata with Green Sauce but for a change here is another version with courgettes. This is from Jenny Linford’s ” The London Cookbook”.

      1. Heat the oil in a 25 cm heavy based pan. Add the onion and fry gently for 5 minutes.
      2. Add the courgette slices and fry very gently until softened. Meanwhile, beat together the eggs and season with salt and freshly ground pepper. Mix in the mint.
      3. Pour the egg mixture over the fried onion and courgette. Layer over the goats cheese. Fry very gently for about 10 minutes until almost set.
      4. Meanwhile preheat the grill then finish off the frittata under the grill to cook the top side.
