  1. Heat the oil in a large saucepan and fry the onion and garlic over a low heat for 5-10 minutes until softened. Add the tomatoes and cook for 2-3 minutes until they have broken up.
  2. Add the butternut and sweet potato, together with the stock and chilli. Bring to the boil and simmer for 5 minutes.
  3. Stir in the ham hock and quinoa and cook gently for 15 minutes until the vegetables are tender.
  4. Ladle into bowls then scatter over the parsley to serve.
