Broccoli with Lemon and Parmesan (2-4)

A favourite way with Broccoli from ” Nigellissima” by Nigella Lawson. It can also be made with my favourite – purple sprouting broccoli. If you want to have it as a main it will serve two topped with a poached egg.

Instructions
  1. Bring a pan of water to the boil for the broccoli and add a little salt. Cook the broccoli until the stalk is tender then drain and return to the pan. Stir in the lemon juice and toss to coat.
  2. Tip into a warmed bowl and add the parmesan flakes and the olive oil. Toss well so some of the flakes start to melt. Add pepper and more salt if needed.
