Blue Cheese and Tomato Crostini (4)

A fantastic snack from ” Eat Drink Live” by Fran Warde. If you are not a fan of blue cheese you could use Mozzarella, Taleggio or soft goats cheese.

  1. Toast the bread slices on each side and rub with the garlic, then sprinkle each slice with 1/2 tablespoon olive oil.
  2. Crumble half the blue cheese with your fingers and divide it between the 4 slices of toast. Top with the sliced tomatoes in a single layer.
  3. Cover with the remaining cheese and sprinkle with salt and pepper.
  4. Cook the crostini under a hot grill, until the cheese melts and begins to brown lightly, about 4-5 minutes. Serve hot or warm.
