  1. Peel the potatoes and cut into large chunks. Put into a pan with salt and enough water to cover by about an inch. Bring to a boil then simmer, uncovered for 5 minutes. Add the apple and continue cooking until the apple and potatoes are both very tender. Drain carefully.
  2. Mash the potatoes and apple with the butter then over a low heat beat in enough milk to give a light mash.
  3. Stir in the beetroot and the parsley. Season well and serve immediately.
