Apple Cider Cake (10-12)

A ” secret” recipe from Devon which can be found in ” Food Glorious Food”, based on the ITV series where they searched for Britain’s best recipes. Serve hot as a pudding with clotted cream, custard or ice cream, or cold at tea time.

  1. Put the sultanas in a bowl with the cider and leave to soak, preferably overnight, but for at least one hour.
  2. Preheat the oven to 180 C, 350 Fan, gas Mark 4. Line a 37x27x7 cm roasting tin with baking parchment.
  3. Put the fat and sugar into a bowl and cream together. Beat in the eggs, then add the sultanas with the cider and apples. The mixture will curdle but hold your nerve! Stir in the flour and mixed spice.
  4. Pour or spoon the cake batter into the prepared tin and bake for 40-50 minutes, or until a skewer inserted in the centre comes out clean. Turn the cake out of the tin, peel off the parchment and cut into rectangles. Serve as suggested in the introduction.
